Recipe: Crispy Chili‑Honey Duck Bites with Citrus Herb Slaw
A luxe twist on classic game‑day wings- serves 4-6
Ingredients
For the Duck
2 lbs duck legs or boneless duck thighs
1 tsp sea salt
1 tsp black pepper
1 tsp smoked paprika
½ tsp garlic powder
Chili‑Honey Glaze
¼ cup honey
2 tbsp chili crisp or chili oil
1 tbsp soy sauce
1 tbsp rice vinegar
1 tsp grated ginger
Zest of 1 orange
Citrus Herb Slaw
2 cups shredded cabbage (mix of red + green)
1 small fennel bulb, thinly sliced
1 orange, segmented
2 tbsp chopped cilantro
1 tbsp olive oil
1 tbsp rice vinegar
Pinch of salt
Instructions
Prepare the Duck
Preheat oven to 400°F.
Pat duck dry and season with salt, pepper, smoked paprika, and garlic powder.
Place on a wire rack over a baking sheet and roast 35–40 minutes, until skin is crisp and meat is tender.
2. Make the Chili‑Honey Glaze
In a small saucepan, combine honey, chili crisp, soy sauce, rice vinegar, ginger, and orange zest.
Simmer on low for 3–4 minutes until slightly thickened.
3. Toss & Crisp
Remove duck from oven and cut into bite‑size pieces.
Toss with glaze and return to oven for 5 minutes to caramelize.
4. Make the Citrus Herb Slaw
Combine cabbage, fennel, orange segments, and cilantro.
Drizzle with olive oil and rice vinegar; season lightly.
5. Serve
Pile the slaw onto a platter.
Top with the crispy duck bites.
Finish with extra chili crisp or orange zest for flair.
