Las Vegas is a city built on spectacle - shimmering lights, bold flavors, and over-the-top moments. But every now and then, a place comes along that takes all that glamour and turns it inward, into something intimate and personal - a place that reminds you why food (and drinks), at their best, are a love language. Liam’s Den & Bubble Bar in the Palazzo Tower at The Venetian is exactly that kind of place.


This hidden gem is a must-visit for anyone looking to escape the frenetic world of neon lights outside. From the moment you step inside, there’s an unmistakable energy - elegant but never intimidating, luxurious yet effortlessly inviting.

Every detail feels curated and intentional - dark, sophisticated décor, comfortable seating, gentle lighting, and accents that give the space undeniable style. One of the standout touches is a cherry-blossom tree that towers behind the bar, grounding the space with a sense of calm and beauty. It’s one of those rare spaces that makes you exhale immediately - ready for the experience to come.

The drink menu sets the tone. The sparkling wine and champagne selections are exceptional, and for those feeling adventurous, the champagne and whiskey flights are not to be missed. We chose the aptly named “Champagne Is King” flight, featuring Ayala Brut Majeur, Colliery Extra Brut Grand Cru, and Taittinger Brut Réserve - a trio that showcases the finesse of true French craftsmanship.

A rotating menu, inspired by the shows at The Sphere nearby, keeps things playful and imaginative. During our visit, a Wizard of Oz-themed menu offered visually stunning and delicious creations. We sampled the Lion’s Courage, a smoky bourbon-based cocktail with notes of ginger and peach - bold yet beautifully balanced. It arrived still smoking.

dust, felt like pure celebration - light, luxurious, and golden to the last sip. For those with a whimsical side, the Glinda’s Fizz is a sparkling cocktail crowned with a cloud of pink cotton candy that dissolves into the glass like magic. The Red Ruby, with tart pomegranate and citrus, gleams like a jewel in the soft light.

And then, of course, there’s the incredibly delicious food.


Chef Sol Soto’s menu is a masterclass in balance - luxurious yet approachable, refined yet comforting.  You can feel her heart in every dish, and it’s no exaggeration to say that you can taste the love in every bite. Every element is made from scratch, from sauces and dressings to crisps and garnishes. That kind of dedication isn’t necessary in a city full of flash, but it’s exactly what sets Liam’s Den apart.

The soon-to-be-famous Millionaire Dip is the perfect example of comfort food elevated to an art form. A velvety blend of caramelized shallots and onions topped with gleaming caviar, served alongside freshly made potato crisps - including an unforgettable truffle-parmesan version - it’s both nostalgic and indulgent, the kind of dish that silences a table mid-conversation (Emily Simpson and I have had multiple conversations about it since). It takes hours to slowly caramelize the onions and shallots for the dip to perfection- but every minute is worth it. It’ll haunt your dreams in the best way.

The beef empanadas, served with a luscious cilantro crème fraîche, were rich, savory, and impossibly inviting. The Chicken Bang Bang, featuring organic chicken glazed in hot honey and chili, was perfectly marinated and tender, delivering just the right balance of

heat and sweetness. And the Smoked Salmon Flatbread, layered with lemon cream cheese, capers, and dill, then finished with a delicate zest of lemon and an (optional, but come on) crowning touch of osetra caviar, was both elegant and playful - a dish that tastes as spectacular as it looks.


Liam’s Den & Bubble Bar is not just a meal or a night out - it’s an experience. You can feel the love behind it all: in the cocktails, the food, and the way the space makes you feel welcome.
