When I joined Jeremy Hubbard on FOX31 Denver, we talked about why more people are choosing to ring in the new year without alcohol- and how that choice doesn’t mean sacrificing flavor, ritual, or sophistication.

The secret to making a mocktail feel like a cocktail is complexity, and that’s where a rich mulling spice simple syrup comes in.
Pomegranate Tart Cherry Spice Mocktail
This mocktail combines tart cherry juice and pomegranate juice- both rich in antioxidants- with warming spices that give it that unmistakable winter feel.
Mulling Spice Simple Syrup (Make Ahead)
This syrup is the foundation of the drink and incredibly versatile.
Ingredients
2 cups water
2 cups sugar
2 tablespoons mulling spice
Instructions
Combine water, sugar, and mulling spice in a saucepan.
Bring to a gentle simmer and cook for 20 minutes, stirring occasionally until the sugar is fully dissolved and the syrup is fragrant.
Remove from heat and let cool completely.
Strain into a non-reactive container and refrigerate.
This delicious syrup lasts up to one week in the fridge and is a wonderful addition to coffee, tea, and everything in between.
Pomegranate Tart Cherry Spice Mocktail Recipe
Ingredients
3 oz pomegranate juice
2 oz tart cherry juice
1 oz mulling spice simple syrup (adjust to taste)
Sparkling water or alcohol-free bubbles
Ice
Instructions
Fill a glass with ice.
Add pomegranate juice, cherry juice, and simple syrup.
Top with sparkling water and gently stir.
Optional Garnish
Orange peel
Fresh rosemary
Amarena cherries or pomegranate aril
Sober New Year’s Eve isn’t about restriction- it’s about intention. It’s about choosing drinks that support how you want to feel, without giving up the joy of a beautiful glass, a meaningful toast, or a celebratory moment.
