Three Caviar Tastings & a Delicious Millionaire Caviar Dip Recipe (As Seen on Good Day CBS)

If you caught Good Day on CBS yesterday, you may have seen me in the kitchen indulging in one of my favorite entertaining recipes: Millionaire Caviar Dip (inspired by Liam's Den and Bubble Bar in Las Vegas). It’s decadent, crowd-pleasing, and surprisingly easy to pull together- especially if you prep it the day before.
For the segment, we tasted three different caviars, all outstanding and all from The Caviar Co. in San Francisco, a trusted source used by top chefs and luxury restaurants alike. The Caviar Co. shared their three favorites to pair with each of our applications. Each caviar brought something unique to the table, and together they showed just how versatile (and approachable) caviar can be.

Kaluga Caviar - The Chef Favorite
We started with a classic caviar bump of Kaluga, known for its larger pearls and rich umami flavor. (Read about the 500-year history of the viral "Caviar Bump" HERE). This Kaluga is hugely popular with chefs. It’s the caviar used at the SingleThread, the three-Michelin-star restaurant in Healdsburg, known for its meticulous, ingredient-driven cuisine and one of the most celebrated restaurants in the country. Smooth, luxurious, and deeply savory, Kaluga is perfect for purists who want to taste caviar on its own. It's also delicious paired with Scallops.

White Sturgeon - Simple, Briny, and Beginner-Friendly
Next, we served White Sturgeon caviar over a crème fraîche base, finished with fresh chives and paired with kettle chips. This caviar has a brinier profile with creamy, buttery notes, making it an excellent entry point if you’re trying caviar for the first time. It’s also a great option for entertaining when you want something elegant with just a few minutes of prep.
Osetra - The Kobe Beef of Caviar
Finally, we went all-in with Osetra caviar- often called the Kobe beef of caviar- served atop our Millionaire Caviar Dip. Osetra is prized for its savory, decadent, meatier flavor, and it pairs beautifully with the richness of this dip. Our Osetra on camera was shown with a gorgeous crystal serving dish, also from The Caviar Co.
Cleansing Your Palate
Champagne is an effective palate cleanser because of its high acidity and effervescent bubbles.
Brion Wise Champagne, Millésime 2015, Brut

To cleanse our palates between each caviar, we sipped Brion Wise Champagne, a unique collaboration between a Napa Valley winery and a historic French Champagne house.
This 50% Pinot Noir and 50% Chardonnay blend was created in partnership with the eighth-generation Coutelas family, who established themselves in the Champagne region in 1809. Produced from 60-year-old vines at the A.D. Coutelas et Fils vineyard, the base wine was fermented in stainless steel, blended, and then held en tirage for seven years.

A pure vintage expression, the wine shows a deep yellow-gold hue with fine, persistent bubbles and a rich, velvety mouthfeel. Its balance and elegance made it the perfect palate cleanser between tastings, allowing each caviar to truly stand on its own. It also pairs beautifully with the Millionaire Caviar Dip recipe below.
Tasting Notes: We loved how this perfect blend of champagne had just the right amount of acid with a lovely balanced cream. On the first sip, Brion Wise Champagne opens with bright notes of toasted brioche and ripe orchard fruit, followed by hints of lemon zest and golden apple. The mousse is fine and creamy, coating the palate without heaviness, while subtle layers of almond, honeyed citrus, and gentle minerality emerge on the finish. There’s a beautiful tension between freshness and richness, making it both refreshing and grounding- exactly what you want between bites of caviar.
Millionaire Caviar Dip Recipe

Ingredients
1 large yellow onion, thinly sliced
2 large shallots, thinly sliced
2 tbsp unsalted butter, plus a pat more for caramelizing
1 cup crème fraîche
¼ cup mascarpone cheese
1 tsp Worcestershire sauce
½ tsp garlic powder
½ tsp sea salt, plus more to taste
¼ tsp black pepper, plus more to taste
Crispy fried shallots, for topping
Chives, finely chopped, for garnish
1–2 oz high-quality caviar (we used Osetra from The Caviar Co.)
Kettle chips, for dipping
How to Make It
Caramelize the onions and shallots: Melt butter in a skillet over medium-low heat. Add onions and shallots with a pinch of salt and cook slowly, stirring often, until golden and caramelized. This step builds the foundation of flavor- don’t rush it.
Make the base: Let the onion mixture cool. While it cools, prepare the base. In a glass or other non-reactive bowl, stir the Worcestershire sauce, garlic powder, sea salt, and black pepper into the crème fraîche and mascarpone. Fold in the caramelized onion and shallot mixture until well combined. Taste and adjust seasoning.
Chill and rest: Cover and refrigerate the dip overnight if possible. Making the base a day ahead allows the flavors to fully meld and deepen.
Finish and serve: Spoon the dip into a serving bowl, top with crispy fried shallots and chives, then gently add the caviar just before serving.
How to Serve It
This dip is incredible with classic sea salt kettle chips, and we especially love it with truffle oil kettle chips for an extra layer of luxury. The crunch, salt, and richness are perfectly balanced.
