The hype is real- This Viral Lobster Bisque Pasta is heavenly!

Are you ready to elevate your dinner game with a gourmet dish that's as easy to make as it is delicious? Look no further than this incredible Lobster Bisque Pasta recipe! Inspired by a viral TikTok trend, this recipe combines the convenience of Trader Joe's and Albertsons products with a few fresh ingredients to create a restaurant-quality meal in the comfort of your own home.  We used already-cooked seafood since we had it on hand, but this recipe is easy to adjust to whatever you have in your freezer.  It was easy to make, easy to elevate, and even our five-year-old downed the entire meal (which is a huge win no matter how you slice it!)

Ingredients:

  • 24 ounces Lobster Bisque Soup

  • 1 medium onion, finely chopped

  • 2 shallots, minced

  • 3 cloves garlic, minced

  • 1 can (14.5 ounces) petite diced tomatoes

  • 1/3 cup frozen sweet corn

  • 1 cup fresh spinach, roughly chopped

  • 1 pound pasta of your choice (we used bucatini, but linguine or fettuccine work well)

  • 1 teaspoon dried thyme

  • 5 ounces cooked lobster chunks

  • 8 ounces cooked shrimp

  • Two tablespoons butter

  • Salt and pepper to taste

  • Grated Parmesan cheese for serving (optional)

  • Fresh parsley for garnish (optional)

Instructions:

1. Sauté the Aromatics:

  • In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion, minced shallots and garlic, and sauté until they are softened and translucent, about 5-7 minutes.

2. Prepare the Pasta Sauce:

  • Once the onions, shallots, and garlic are tender, pour in the entire can of petite diced tomatoes, including the juices and one teaspoon of dried thyme. Stir well to combine with the onions and shallots.

  • Next, add the frozen sweet corn to the skillet. Stir and let it cook for another 7-10 minutes until the corn is heated through and liquid starts to reduce.

  • Pour in the entire 24 ounces of Lobster Bisque Soup into the skillet. Stir to combine all the ingredients, and let the sauce simmer gently over low heat while you prepare the pasta.

3. Cook the Pasta and heat seafood:

  • Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until it is al dente. Drain the pasta, reserving about a cup of the pasta cooking water.

  • In a separate skillet, melt butter, and toss lobster chunks and shrimp to coat and gently heat through.

4. Finish the Dish:

  • Once the pasta is cooked, add it directly to the skillet with the lobster bisque sauce. Add butter and seafood.  Toss the pasta and seafood in the sauce until it is well coated.

  • Add the fresh spinach to the skillet and gently stir it into the pasta until it begins to wilt.

  • If the sauce seems too thick, you can add a splash of the reserved pasta cooking water to loosen it up.

  • Season the pasta with salt and pepper to taste.

5. Serve and Enjoy:

  • Divide the lobster bisque pasta among serving plates. If desired, sprinkle each serving with grated Parmesan cheese and fresh parsley for an extra burst of flavor and color.

  • Serve immediately and enjoy the luxurious flavors of this restaurant-worthy dish!

Tips:

  • Feel free to customize this recipe by adding additional seafood such as Red Argentinian shrimp (Trader Joe’s Red Argentinian shrimp is a freezer staple in our house) or langostino tails for extra indulgence.

  • This works well with leftover vegetables.  I added ¼ cup of diced fresh roasted red peppers one time, and sauteed some extra organic grape tomatoes I had on hand to throw in with the spinach at the end of the cook.  Every addition felt purposeful (and not just like I was trying to use my veggie leftovers).

  • For a spicy kick, you can add a pinch of red pepper flakes to the sauce.

With just a few simple ingredients and minimal effort, you can treat yourself to a gourmet dining experience at home with this viral Lobster Bisque Pasta recipe. Bon appétit!
